In the US, commercially available rainbow trout is largely an aquaculture product ecologically and responsibly raised in raceways, ponds and tanks. Most is raised in the US, with Chile being the largest importer. A member of the salmon family, it may be also called golden trout, steelhead or steelhead trout. Rainbow trout is available fresh, frozen, smoked and canned. The delicate meat can be white, pink or orange, and has a medium flavor. It is high in Omega-3 fatty acids. Rainbow trout is sold as a whole fish or skin-on fillets (both boneless and pin bone in). Most are harvested at 9 months, although some larger sizes may reach 20 months.
