Atlantic salmon, which closely resembles brown trout, is the species of salmon most widely found in aquaculture. It is cultured commercially in sea cages in Australia, Chile, Norway, Canada, the UK and Russia. It breeds naturally on the western coast of Europe, from Portugal to Norway and even Greenland, and along the eastern coastline of North America, from Connecticut through Labrador. However, commercial business in wild-caught Atlantic salmon is almost non-existent. As are all salmon, Atlantic salmon is a good source of high quality protein, and contains more healthful Omega-3 fatty acids than most other salmon variants. It also has a higher fat content. It is the most widely consumed salmon in North America. Atlantic salmon is available as steaks, fillets and as a whole dressed fish. Fillets are generally sized as 1-2lbs, 2-3lbs, 3-4lbs and 5/up lbs. A wide variety of trims are available, the most common of which are referred to as C, D and E. Steaked, there are a huge variety of sizes. In addition, a high percentage of Atlantic salmon is smoked and canned. Whole fish range from 2 to 14 pounds.
