Yellowfin sole, found abundantly around Alaska and the Bering Sea, is largely sustainably harvested at sea, frozen whole or headed and gutted, then transported to Asian countries for reprocessing. It is re-exported primarily to the US and the EU, although there is a growing market for dried yellowfin sole in the Chinese domestic market. It is available year-around. It is a slow-growing species, and the target age for harvesting is at about 6 years. The bulk of yellowfin sole production is skinless, boneless fillets. It is a delicate, flaky fish, and when cooked has a mild, sweet flavor.
