Although approximately 100 species of fish are referred to as tilapia, the most common species for freshwater aquaculture is the black or Nile tilapia (oreochromis niloticus). Also widely used in aquaculture is the red or Mozambique tilapia (oreochromis mossambica). A hardy, disease-resistant and fast-maturing fish, it thrives in a tropical environment above 21 °C (70 °F). It is raised in inland tanks, ponds and waterways where its feeding and care is generally easy to administer and monitor. The top global suppliers China, Indonesia, Egypt, the Philippines, Taiwan and Thailand constitute more than 75% of the worldwide production. Other tilapia producing countries include Viet Nam, Brazil, Columbia, Ecuador and Costa Rica. China is by far the largest producer of tilapia, and traceability throughout its supply chain has become a good model for transparency. Auditing a reputable supplier from hatchery, fingerling production, grow out, harvesting and to final production should predictably meet BAP standards.
