Chum salmon (also known as keta), is a hardy and abundant wild-caught fish found in western Washington, the Columbia River and Puget Sound. Its run is longer than other salmon, beginning as early as June and continuing through November. Hatcheries release billions of chum smelt each year, which keeps stocks consistent. Although not as rich a source of Omega-3 fatty acids as its more expensive cousins, chum salmon rates higher than most other fish. Its popularity suffers partly because of the wide flesh colors, ranging from a rich red meat to a pale flesh. Its eggs are highly prized, and may exceed the value of the fish.
